Breakfast Sausage - Volga Dutch
Got this recipe in November 2023 from the Volga Dutch Facebook page.

Ground Pork Butt |
2/3 Cups |
Buttermilk |
2 - 1/4 teaspoons |
kosher salt |
1 - 1/2 teaspoons |
rubbed sage |
1 - 1/2 teaspoons |
Brown Sugar packed |
3/4 teaspoons |
dried marjoram |
3/4 teaspoons |
dried savory (couldn't find so left out) |
3/4 teaspoons |
cayenne pepper |
1/4 teaspoon |
ground nutmeg |
1/4 teaspoon |
garlic powder |
1 - 1/2 teaspoons |
black pepper |
Preparation
- Blend the spices together
- Add the pork and buttermilk and mix thoroughly
- Place in the refrigerator for 30 minutes before forming patties
- Pat into approximately 15 - 18 patties of equal size and weight
- Place patties on small sheets of parchment paper or oiled cookie sheet and freeze. Once frozed take them out and vacuum seal in groups with the number of patties that you intend to cook in a given meal.
