Breakfast Sausage - Volga Dutch

Got this recipe in November 2023 from the Volga Dutch Facebook page.

Ingredients

2 lbs Ground Pork Butt
2/3 Cups Buttermilk
2 - 1/4 teaspoons kosher salt
1 - 1/2 teaspoons rubbed sage
1 - 1/2 teaspoons Brown Sugar packed
3/4 teaspoons dried marjoram
3/4 teaspoons dried savory (couldn't find so left out)
3/4 teaspoons

cayenne pepper

1/4 teaspoon ground nutmeg
1/4 teaspoon garlic powder
1 - 1/2 teaspoons black pepper

Preparation

  1. Blend the spices together
  2. Add the pork and buttermilk and mix thoroughly
  3. Place in the refrigerator for 30 minutes before forming patties
  4. Pat into approximately 15 - 18 patties of equal size and weight
  5. Place patties on small sheets of parchment paper or oiled cookie sheet and freeze. Once frozed take them out and vacuum seal in groups with the number of patties that you intend to cook in a given meal.
